One pie shell
3/4 cup of cut rhubarb, about 1" pieces
3/4 cup cut strawberries
2 eggs
1/4 cup flour
1/2 cup sugar
Mix eggs, flour and sugar together, blend in rhubarb & strawberries, stuff into pie shell and bake at 350 for about 40 minutes.
Is that easy or what!? This is the kind of recipe you keep in your back pocket when you need something FAST and delicious. I find other recipes have too much sugar in them. The strawberries sweetness cut the acid in the rhubarb just brilliantly!
